There are a few different variations on this salad, one of which I tasted while at our pre-Christmas get together with family last year. It was delicious. Phil's aunt was nice enough to give me the recipe and I have since tweaked it to fit my always-trying-to-lose-weight-healthily lifestyle. For those of you who don't need to worry about such things (like my husband, who can eat ice-cream with no visible consequence whatsoever...) I've put a list of optional ingredients as well. This recipe is very tasty and quite simple to prepare which makes it (in my opinion) one of the best ways to eat broccoli...
Broccoli Salad
2 broccoli crowns (large stalks removed, and divided into small florets)
3 stalks celery (chopped)
1 bunch of green onions (chopped)
1/2 cup raisins (or halved grapes)
1/2 cup light mayonnaise (If you're doing Weight Watchers, you could use Fat Free to make the salad only 1 point!)
3 Tbsp sugar
2 Tbsp white vinegar (I have used cider vinegar before as well...)
Toss all ingredients into gallon-size Ziplock bag (or something similar) and shake it up and roll it around to mix. Let it refrigerate for at least 2 hours before pouring the bag into a nice bowl for serving. Who eats salad out of a bag?! Honestly! :)
Ok, so here are the optional (guilt-laden) ingredients that you could add if serving it at say a pre-Christmas get together: chopped walnuts, shredded cheese, crumbled bacon, chopped ham, or you could (sin of all sins) use real mayo.

We make a version of this salad using brocolli and cauliflower, cut up fine, golden raisins, apple cider vinegar, bacon and sunflower seeds. We also use Splenda instead of sugar. People who don't like broccoli or cauliflower usually end up liking this.
